BACON
WRAPPED SCALLOPS/ PRAWNS
Pan
Fry: Cook in a pan for 6-7 minutes a side or until bacon is golden
brown on medium heat. This applies for both bacon wrapped scallops or prawns.
Conventional oven: for best results preheat oven to 425 degrees. Place on baking pan 1/2” apart for 20 minutes
prior to baking, allowing to temper. Place in oven and bake for 20-30 minutes.
Broiler (For Crispy Bacon): Preheat Broiler. Place on baking pan 1/2” apart for 20 minutes prior to baking, allowing
to temper. Place in Broiler for 20 minutes.
CRAB CAKES
Pan Fry: Heat up two tablespoons of olive
oil in a pan, and then add your frozen crab cakes into the pan. Cook
crab cakes for 7 minutes a side on medium heat. Once both sides are
golden brown they are
done.
DUNGENESS CRAB/ KING CRAB
Steam Cook: Rinse your Crab
Legs Thoroughly. Fill your steam pot or regular pot with one inch of water and
cover with lid until water comes to a boil. Place your crab into the
steam basket or pot and let it steam for 10-15 minutes or until it heated
through. This method will work for any crab in the shell.
TEMPURA PRAWNS
Pan
Fry: Heat up two table spoons of olive oil add the tempura and cook for
3-5 minutes at Med. Heat.
Deep
Fry: 3-5 minutes at 350 degrees.
Bake:
10 minutes at 375 degrees.
BASIC DIRECTIONS FOR COOKING LOBSTER
If
possible thaw lobster tails before cooking - they will be tenderer than those
cooked frozen. Place the shears between the meat and the shell on
the back of the tail. Cut the shell down
the center. DO NOT cut fan tail, leave
it intact. Gently lift the raw tail meat
out through the split shell, leaving it attached at the tail. Place lobster tails in pan with a little
water to prevent drying.
Boiling Lobster Tails
Thaw
lobster tail, place into large pot of boiling water. When water comes back to a boil, lower heat
and begin timing.
